Leftover Quesadilas In 10

My husband is not a fan of leftovers.  Let me rephrase.  He is not a fan of eating the same meal two days in a row.  So what to do when there is left over shredded Mexican spiced chicken from tacos?  Quesadillas.


I sauteed up some green pepper, onion, and garlic and spread it on a tortilla in the frying pan.


Topped it with the left over shredded chicken sprinkled with a little cumin, some Cojito cheese and another tortilla.  Flipped it and grilled the other side.  Yum.


With a little pile of shredded lettuce, chopped tomato, diced avocado, and a dollop of Daisy sour cream and I had dinner on the table in less then 10 minutes.  Nice.
